Ingredients
3 large ripe bananas
2 cups whole wheat flour
1 cup regular flour
1 cup cornmeal
1 teaspoon baking soda
a1/2 teaspoon salt
1/2 cup honey
1/4 cup brown sugar, packed
1/4 cup butter softened
2 eggs
1/2 cup buttermilk
1 cup raisins
1/2 cup chopped walnuts
Preparation
- Slice bananas into a blender and process until pureed.
- Preheat the oven to 325 degrees.
- Combine flours, cornmeal, baking soda and salt.
- Cream the honey and brown sugar with the butter until light, about 3 minutes.
- Beat in eggs until blended.
- Beat in 1/3 of the flour mixture alternately with bananas and buttermilk.
- Continue folding ingredients together, ending with the flour mixture. Fold in raisins and nuts.
- Spray 2 (9 X 5 inch) loaf pans with non-stick coating. Turn batter into pans and bake at 325 degrees 50 to 60 minutes or until a toothpick comes out clean. Rotate half way.
- Cool in the pan 15 minutes and invert onto a wire rack.
