Ingredients
2 potatoes cut into chunks
1 egg
4 tilapia fillets
Bread crumbs
Salt
Pepper
2 tbsp butter
1 tbsp flour
1/2 c. milk
Parsley
Juice and zest of one lemon
Preparation
Boil pot of salted water and add potatoes. While potatoes are cooking: Melt 1 tbsp. butter in skillet. Beat egg. Mix bread crumbs with salt and pepper. Dip tilapia in egg and then in bread crumbs. Cook 3 min per side in melted butter. Remove fish from pan. Melt additional tbsp. butter Add flour and cook for 2 mins, stirring. Add milk. Bring to boil and then simmer 2 mins. Stir in parsley, salt, pepper, and lemon juice. Add fish and potatoes. Cook for 1 minute and serve.
