Ingredients

1 TBLS extra virgin olive oil

6 medium tomatillos (about 8 oz) husked, rinsed, and coarsely chopped

1/4 cup chopped onion

2 cloves garlic minced

4 large eggs lightly beaten

1/8 tsp salt

1/4 tsp pepper

4 small corn or wheat tortillas

1/4 cup crumbled queso or fets

Preparation

-Heat oil in large non stick skillet over med heat -Add tomatillos, onion, garlic and cook, stirring until most of liquid is evaporated 8-10 min -Add eggs, pepper and salt, and stir, cooking until eggs are set 2-3 min

-Divide among tortillas and sprinkle with cheese
