Ingredients
crust:
1 Pack (roll) Ritz crackers
3/4 stick melted oleo
pie:
2 lg. sliced tomatoes (or enough to cover pie pan
bottom when sliced thick)
salt and pepper to taste
fresh basil and oregano, chopped (or just basil)
topping:
1 C mozzarella cheese, grated
1 C cheddar cheese, grated
1/4 C mayonnaise
Preparation
Mix crust ingredients and cover bottom and sides of pie pan. Slice tomatoes thick and drain VERY well on paper towels. Place tomatoes on crust, then add salt, pepper and herbs. Mix in small bowl the cheeses and mayo, then place on top of pie, flattening and shaping it as you go. Bake at 350* for about 30 minutes.
