Preparation
roast corn under broiler to obtain roasted flavor
add chicken to a pot and cover with water Add one onion quartered add two whole carrots or several small ones add cumin, salt and pepper bring all ingredients to a boil for one hour. Remove chicken and continue to reduce broil corn in broiler to obtain roasted flavor add roasted corn to other boiling ingredients once reduced, strain broth through sieve into new pot. add small can of tomato sauce, cilantro and spices and simmer. Add pulled while chicken. Meanwhile slice and toast tortillas in oven. Serve with avocado, cheese and toasted tortillas.
If you prefer a thicker soup, put ingredients from sieve into blender, add one cup of stock and tomato sauce and blend until smooth. Serve in bowl and add chicken and tortillas on top.
