Ingredients
3 slices bacon, cut crosswise
1 onion, chopped
1 clove garlic
1 Tbsp chile powder
2 15oz cans pinto beans, drained and rinsed
1 can dices tomatoes
1/2 cup barbecue sauce
1 Tbsp adobo sauce
1 tsp kosher salt
Red wine vinegar
Preparation
Crisp bacon in Dutch oven, about 4 min Remove bacon Add onion and saute, about 4 min Add garlic and chile powder and stir about 30 sec Add remaining ingredients except vinegar Bring to boil, then simmer until thick, about 2 hrs Add salt, adobo, and vinegar to taste Garnish with bacon
