Ingredients

1 lb. ground turkey

1/2 cup fresh bread crumbs

1/3 cup chopped flat leaf parsley

1 egg lightly beaten

% tsp salt

1/2 tsp freshly ground black pepper

1 tbsp safflower oil

1 small onion finely chopped

1 small clove garlic minced

4 toasted hamburger rolls

Preparation

  1. In a medium bowl mix the ground turkey with the bread crumbs, parsley, egg, salt and pepper. Cover and refrigerate.

  2. Light the grill. Heat oil in a small skillet. Add onion and cook over high heat until beginning to brown, 3 to 4 minutes. Stir in the garlic and remove from heat. Let cool to room temperature, then stir into turkey mixture.

  3. Form turkey into 4 patties. Cook the patties on an oiled grill for about 6 minutes per side, or until an internal temp of 145 is reached. Serve the burgers on the buns.

Fresh plum Sauce with Basil

1 ‘/2 lb. ripe purple plums pitted and cut into 1 inch chunks 1/3 cup balsamic Vinegar

1/2 cup shredded fresh basil

‘/2 tsp freshly ground black pepper

M: tsp salt

  1. In a medium non-reactive saucepan bring the plum s and Vinegar to a boil over high heat. Cover and reduce the heat to moderately low. Cook the plums stirring often,

until tender, about 10 minutes.

  1. Puree the plums in a food processor. Strain the puree into a non-reactiVe bowl. Stir in the basil, pepper, and salt and let cool. Use or cover tightly and refrigerate up to 1 week.
