Ingredients

2 Tbsp Olive Oil

1 Large Onion

2 cloves minced garlic

3 stalks of celery, diced

2 diced carrots

8 cups of turkey broth

2 cups of cooked farfalle pasta

2 cups shredded turkey

2 Tbsp lemon juice

2 tsp lemon peel

5 oz fresh spinach

grated parmesan to taste

Preparation

Saute vegetables 8 - 10 minutes and add to broth. Add remaining ingredients and simmer 5 minutes. Serve with parmesan.
