Ingredients

1 1/4 lb ground turkey

1/2 cup white long grain rice

1/2 cup finely chopped green pepper

2 tablespoons minced onion

1/2 teaspoon salt

1/4 teaspoon black pepper

1 (19 oz) can enchilada sauce

1/4 water

Preparation

  1. Combine first 6 ingredients, mix well
  2. shape in to 1 1/2" meatballs and place in the crock pot
  3. Combine last 2 ingredients and pour over the meatballs
  4. Cover and cook on low for 6 hours
