Ingredients

1 turkey carcass and dripping

6 TJ turkey stock

1 chix stock

3 leek green part or whole

3 lg onions 1/4’d

6 unpeeled carrots

8 leafy unpeeled celery 1/3’s

8 garlic cloves

1 bunch fresh dill

1 bunch fresh parsley

1 tablespoon whole peppercorns

2 tablespoons salt

2 onions-chp

5 lg diced carrots

2 cups rinsed pearl barley

6 diced celery

5 cups chp leftover turkey

1 tablespoon better than boulion

Preparation

  1. put turkey carcass,dripping and next 11 ingredients in lg soup pot.

  2. add water to cover–season w/ better than boulion if needed

  3. bring to boil–then lower & simmer for 3 hrs–uncovered–cover if needed

4.take out bones and vegtables–drain soup into another pot

  1. add barley, chp onions, carrots, & celery–bring to boil

  2. lower heat and ck about 45 min till barley and vegs are ckd
