Ingredients
2 Turkey Drumsticks, cooked
2 Turkey Wings, cooked
8 quarts Chicken Stock
2 Onions, chopped
1 Bay Leaf
1 tablespoon Salt
1 teaspoon Pepper
4 sprigs Parsley
1/2 teaspoon Thyme
2 cloves Garlic,chopped
4 Carrots, thinly sliced
1 bunch Celery, thinly sliced
28 ounces Canned Chopped Tomatoes
2 tablespoons Fresh Dill
1 cup Rice
Preparation
Place turkey pieces in large soup kettle with broth. Simmer for 1 hour.
Remove turkey bones and trim meat from bones and reserve.
Add onions, bay leaf, salt, pepper, parsley, thyme and garlic. Bring to a boil and simmer 1 hour more.
Add rest of ingredients except turkey meat. Simmer 35-45 minutes more. Add turkey meat and heat through.
