Ingredients

5 pieces chicken thighs or thin breasts

4 cloves garlic, crushed

2 1/2 tablespoons fish sauce

2 1/2 tablespoons oyster sauce

1 teaspoon white pepper

3 tablespoons cilantro / coriander stems finely minced

1 tablespoon turmeric

1/4 cup brown sugar

Preparation

combine marinade ingredients in a bowl

heat oven to 350 degrees. bring chicken to room temp.

place parchment paper on baking tray. place chicken on tray and pour remaining marinade over chicken.

bake 35-45 minutes, if it starts to brown too much cover in foil.

To pan cook: place skin side down for 5 minutes in covered pan. Then turn and cook for another 8-10 minutes.

Let rest for 3 minutes before serving.
