Ingredients

1 pound fresh udon noodles

1 sliced onion

1-2 cups sliced mushrooms or spinach

1T lemon juice

2t black sesame seeds

4 cloves garlic minced

4T ginger minced

1-2T sesame oil

Miso sauce:

4T miso paste

1/2 cup mirin

4T rice vinegar

1/2 cup water

1.5t curry powder

Preparation

Bring salted water to a boil. Add udon noodles and cook until just tender (approx 14 minutes). Drain and rinse under cool water.

While noodles are cooking, heat 1T oil in a pan and caramelize onions. Add garlic and ginger in last 5 minutes of cooking.

If using mushrooms, remove onions from pan, add additional 1T oil to pan and brown mushrooms. Add onions to pan.

Mix miso sauce and add to onion mix. Bring to a bubble. If using spinach add now and just wilt. Add udon noodles, stir to coat. Sprinkle sesame seeds and lemon juice. Stir gently and cook sauce to desired consistency. Serve.
