Ingredients

1 cup light corn syrup

1/2 tsp vanilla

1 cup sugar

3 eggs, beaten

1/3 cup crunchy peanut butter

9-inch pie crust

Optional: Whipped Cream

Preparation

Blend together all the ingredients except the pie crust and the whipped cream in a medium mixing bowl. Pour into the pie crust. Bake at 400 F for 15 minutes. Reduce the heat at 350 F. Continue to bake an additional 30 to 35 minutes. Filling should be set slightly more around the edges than in the center. Serve plain or with whipped cream, if desired. Makes 6 to 8 servings
