Ingredients
10 pounds whole bone-in, skin-on pork shoulder, 8 to 12 pounds total
1 dash salt and pepper and a little oil
Preparation
Rub meat with salt, pepper and oil and place on a rack in a baking pan (fat up)
Bake at 250 degrees for 8 hours
Raise oven to 500 degrees and bake another 20 minutes (turning every 5 minutes)
