Ingredients
2 pounds veal – cut into 1" pieces
2 tablespoons flour
1 teaspoon salt
1/4 teaspoon pepper
2 tablespoons butter
1 each onion, large – chopped
2 cloves garlic – minced
14 ounces chicken broth
1 can, small tomatoes, diced
1/2 pound zucchini – sliced
1/2 pound mushrooms – sliced
1/2 cup Dijon mustard
Preparation
Toss veal in flour, salt and pepper. Brown veal in butter. Add onion, garlic, broth and tomatoes to veal. Simmer 1 hour or until meat is tender.
Add vegetables to veal and cook 10 minutes. Stir in mustard and heat.
