Ingredients

3 star anise

1 cinnamon stick

1 smashed garlic clove

small knob fresh ginger

vegetable stock

baby spinach

baby portobello mushrooms, sliced

zucchini, sliced and halved

red bell pepper strips

rice noodles

Preparation

Place 3 star anise, cinnamon stick, garlic clove, and ginger knob into vegetable stock. Simmer for 30 minutes and remove spices. While simmering, sauté baby spinach, mushrooms, zucchini, and red bell pepper strips; add to soup. Add cooked rice noodles.
