Ingredients
1 pack of 7 grain microwaveable rice
1 can of light or dark kidney beans
8 chopped Roma tomatoes
2 TBSP pesto
Salt and pepper
3 TBSP unsalted butter
1 TBSP minced garlic
1 package of baby spinach
Preparation
Microwave the rice and place in a bowl and add drained kidney beans and set aside
Add olive oil to pan and SAUTEE tomatoes, add garlic,no sodium salt, pepper, pesto and butter until tender.
Place beans and rice mixture on a plate, then cover with tomato mixture, juice of the lime on top and add Parmesan cheese.
