Ingredients
1/2 red onion, chopped
3 cloves garlic, minced
1 tablespoon extra-virgin olive oil
3 cups water or veggie stock
4 cups chopped veggies (I generally use a mixture of sweet potato, celery, cauliflower, tomato and jalapeño.)
2 tablespoons hot sauce
1 teaspoon red pepper flakes
1 teaspoon black pepper
1 teaspoon curry powder
1 teaspoon chili powder
1 teaspoon sea salt
1 cup coconut milk
Preparation
Sauté the onion and garlic in the olive oil in a large soup pot.
Add the water or veggie stock.
Stir in the veggies, hot sauce and spices.
Bring the mixture to a boil, and then turn down to low heat and simmer for 30 minutes.
Stir in the coconut milk and simmer for 10 more minutes.
Enjoy blended or as is!
