Ingredients

5 cups watermelon, cubed

5 cups ripe tomatoes, cubed

3 tsp sugar

1/2 tsp salt

1 med size red onion, quartered and thinly sliced

1/2 cup red wine vinegar

1/4 cup virgin olive oil

Black pepper to taste

Preparation

  1. Combine watermelon and tomato in large bowl, sprinkle with sugar and salt, tossing gently to coat. Set aside for 15 minutes.
  2. Stir in onion, vinegar and oil and chill for 2 hours.
  3. Sprinkle with black pepper to taste.
