Ingredients
5 cups watermelon, cubed
5 cups ripe tomatoes, cubed
3 tsp sugar
1/2 tsp salt
1 med size red onion, quartered and thinly sliced
1/2 cup red wine vinegar
1/4 cup virgin olive oil
Black pepper to taste
Preparation
- Combine watermelon and tomato in large bowl, sprinkle with sugar and salt, tossing gently to coat. Set aside for 15 minutes.
- Stir in onion, vinegar and oil and chill for 2 hours.
- Sprinkle with black pepper to taste.
