Ingredients

3 cans Canelliini or navy bean

2 Carrot, diced

2 stalks Celery, diced

1 Yellow onion, diced

3 sprigs Thyme, fresh

2 Bay leaves

1 pound Ham, smoked and cooked in small cubes

1 tablespoon Butter

2 cups Chicken stock

4 cloves Garlic

2 cups Water

Preparation

Melt butter in large pot or dutch oven and sauté on medium-high heat garlic, onion, celery, carrots, and thyme about 5 minutes

Rinse beans then add to pot with water, stock, bay leaves, and ham and bring to a boil

Once at boil, bring down to a simmer for abut 20 minutes

Remove bay leaves. Using potato masher, mash beans to desired thickness
