Ingredients

3 cans of Great Northern beans (rinsed and drained

3 cups of cubed chicken breast (rotassire works great)

1 15oz jar of Alfredo sauce

8 oz block of cream cheese cut into 1 inch blocks

3 cups of chicken broth

1 4 oz can of diced mild chilies

1.5 cups of frozen corn

.5 cup of shredded Monterey Jack cheese

.5 cup shredded Pepper Jack cheese

1 cup reduced fat sour cream

.25 cup chopped yellow pepper

1 small onion chopped

3 cloves of garlic minced

1 Tbsp of ground cumin

1 tsp white pepper

.5 tsp cayenne

Preparation

Easy method

  • Add everything to crock pot.
  • Cover and cook on low for 3-4 hours.

If you have some time

  • Add the onions and garlic to a hot skillet with 2Tbsp butter. Saute until browned.
  • Replace the diced chicken with 3 boneless skinless breasts that you saute in same skillet as garlic and onions.
  • When chicken is cooked pull into bite sized pieces.
  • Add all ingredients to crock pot. Cover and cook on low for 3 to 4 hours.
