Ingredients

2 1/2 cups white wine

1/3 cup olive oil

1/4 cup salt

3 tablespoons lemon juice

1 tablespoon butter

1 tablespoon sugar

1 bay leaf

1 head of cauliflower, leaves removed

SAUCE

Yogurt & Goat Cheese Dipping sauce

1/2 cup yogurt

1/4 cup olive oil

1 tablespoon lemon

1 tablespoon goat cheese

1 teaspoon fresh thyme leaves

1/2 teaspoon fresh rosemary

Preparation

Preheat oven to 475°. Bring wine, oil, salt, lemon, butter, sugar, bay leaf, and 6-8 cups water (until cauliflower is covered) to a boil in a large pot. Add cauliflower and simmer, until a knife can easily pierce into the center, 15-20 minutes. Transfer cauliflower to a rimmed baking sheet, draining well. Roast until browned, 25-30 minutes

Sauce: In food processor, or using immersion blender, combine ingredients until smooth.
