Ingredients
3 each eggs
1 cup vegetable oil
2 cups dark brown sugar, packed
2 cups raw unpeeled zucchini – grated
3 cups flour
1 teaspoon salt
1 teaspoon baking soda
1 tablespoon vanilla
1 cup nuts – chopped
Preparation
Grease and flour 2 loaf pans. Preheat oven to 350*F.
Beat eggs. Add oil, sugar and zucchini; mix well. Stir in flour, salt, and soda. Fold in vanilla and nuts.
Pour batter into prepared pans and bake 350*F for 1 hour. Remove from pans and cool on rack.
