Ingredients

Shredded zucchini 4 cups

eggs 2 beaten

flour 1 c I use gluten free

olive oil

salt

lemon juice

greek yogurt

Preparation

Add a t of salt in a colander with the zucchini and toss. Let it sit for 30 min to drain

Add flour and eggs and stir

cook in hot oil

Mix lemon juice and salt and pepper into Greek yogurt and dollop on top
