Ingredients
2 TBSP butter or olive oil
2 heads of garlic peeled and sliced
1 large white onion peeled and sliced
1.5 pounds of zucchini chopped
4 cups of chicken broth
1/2 tsp ground ginger
salt & pepper to taste
Preparation
In a soup pot, saute onion and garlic until soft. Do not brown. Add zucchini and continue to cook until soft. Add chicken broth and simmer for 45 min.
Use an immersion blender or regular blender to puree. Add ginger, salt and pepper.
