Ingredients

3 eggs

1 c. oil

2 c brown sugar

1 tsp vanilla

3 cups shredded zucchini

2 c raisins

1 1/2 c. cake flour

1 c. whole wheat flour

1/2 c. wheat germ

1 tsp salt

2 tsp. nutmeg

1 tsp. baking soda

1/2 tsp. baking powder

Preparation

In a bowl, beat eggs, oil, sugar and vanilla. Add zucchini. Turn beaters on low adding all remaining ingredients. Stir in raisins last.

Pour in muffin tin 2/3 full. Bake 20 - 25 minutes at 325 degrees.
