Ingredients

2 cups sugar

3 cups flour

1/2 teaspoon salt

1 teaspoon baking soda

1/2 teaspoon baking powder

1 tablespoon cinnamon

3 eggs, beaten

1 cup vegetable oil

2 cups zucchini, grated

3 teaspoons vanilla

3/4 cup walnuts, coarsely chopped

Preparation

Mix dry ingredients together, then add remaining ingredients. Do not over mix. Pour batter into two greased and floured loaf pans. Bake 1 hour at 325, or until toothpick inserted in center comes out clean. Makes 2 loaves.
